Markus. A man who knows his cheese. When Markus talks about his cows, you hear respect – and a deep connection. At Ebenhof, he lives and works with his family, close to the animals and in tune with nature. His cows spend their summers on the alpine pastures, winters safe in a free-range barn. Their milk is the starting point for something special: raw milk cheese, made right on the farm.

Since 2018, Markus has been delivering his cheeses to the Cyprianerhof. Fresh, local crafted by hand, with perfect timing and patience. What he creates takes time. And character. His cheeses have won awards – but they win us over daily with their taste and the quality inside. What we value most is their personality: bold, smooth, and sometimes with a note that catches you by surprise.

You’ll find Markus’ cheese at our breakfast buffet and on your dinner plate – wherever great flavor could use a little more depth.
