Herb Dumplings
Some recipes taste like coming home.
Our herb dumplings are a warm hello from South Tyrol’s kitchen – simple, honest, and full of fragrant charm. They take a little time and a lot of love – and they taste best when the mountains stand outside your door or your mind finally finds stillness inside.

Ingredients

60 g finely chopped onion

200 g fresh herbs of your choice (spinach, parsley, chives…)

2 tbsp butter

2 eggs
-
50 ml milk
-
30 g cheese cubes (Alpine-style cheese works best)

1 tbsp flour

150 g white bread, cubed

1 garlic clove
-
A pinch of nutmeg
-
Salt & freshly ground pepper

30 g freshly grated Parmesan

70 g browned butter
Preparation
Gently sauté the chopped onion in butter until translucent. Add the finely chopped herbs and season with salt, pepper and a touch of nutmeg.
Blend the herby mixture together with the eggs until smooth.
In a large bowl, combine the bread cubes with the blended herbs, milk, cheese cubes, flour, salt and pepper. Mix well and let it rest, covered, for 15 minutes.
Bring a large pot of salted water to a boil. With wet hands, shape the mixture into dumplings.
Simmer gently for 15–20 minutes.
