“Asparagus risotto St. Zyprian” to South Tyrolean
Sauvignon Liebenaich (winery Manincor)
Ingredients:
2 bunches of spring onion
250 g green asparagus
250 g white asparagus
¼ l white wine
2 tablespoons olive oil
250g Carnaroli rice
1 clove of garlic
750 ml vegetable broth
2 tablespoons butter
50 g Parmesan cheese, freshly grated
pepper
basil
Preparation:
Cut the onion to small cubes and fry with the rice in oil until the rice is translucent. Then deglaze it with white wine and pour in the broth. Peel the asparagus, cut it into pieces and add it with the garlic to the rice. Let the risotto boil and then cook it about 15 minutes at low heat. Stir in the butter, the cheese and the pepper. By serving sprinkle the chopped basil on the asparagus risotto.
